Homemade Baked Egg Rolls

Homemade Baked Egg Rolls


You’ll need:
  • egg roll wrappers
  • a bag of cole slaw mix
  • a can of mushrooms
  • 1 tsp garlic, minced
  • 1/4 tsp ground ginger
  • a splash of soy sauce
  • salt and pepper
  • cooking spray or olive oil in a mister (I use olive oil in a mister) (cooking spray)
Optional:
  • mung bean sprouts
  • can of tiny cooked shrimp
  • anything else you think would be good inside of the egg rolls

1. Preheat your oven to 375 degrees Fahrenheit. Put your cole slaw in a large microwave-safe bowl, cover, and microwave 3-6 minutes.

2. Chop your mushrooms and put them in a mixing bowl. This is also when you’d put in the bean sprouts, shrimp, or other fillings.

3. Splash in some soy sauce.

4. Add the garlic. I used a HEAPING teaspoon but I like garlic.

5. And sprinkle in the ginger.

6. By now your cole slaw mix should be cooked. Drain it to get out any excess liquid as no one likes a soggy egg roll.

7. Then combine the cole slaw mix with the rest of the ingredients.

8. Place a bit of filling in the center of each wrapper. (See that little bowl? That has water in it, which you’ll need for sealing the edges.)

9.Fold in two of the corners.

10. Put a bit of water on the top edges with your finger. Fold up the bottom, and roll as tightly as you can to the edge.

11. It helps if you sort of tuck it as you are rolling.

12. Voila!

13. Repeat for the rest of the wrappers, and place the egg rolls on a baking sheet sprayed with non-stick spray or olive oil (mmm… olive oil). Spray the tops of the egg rolls with the oil, too.

14. Bake 15 minutes, then flip the egg rolls over and bake an additional 10-15 minutes. Let cool slightly before serving (this will let the wrappers get a little more crisp too).

15. Serve with soy sauce mixed with rice vinegar for dipping, or your favorite dipping sauce (spicy mustard? duck sauce?).

I made brownies today, you know the kind you purchase in the box, at the grocery store.  Instead of replacing the 1/2 cup of oil with 1/2 cup of unsweetened applesauce, I used 1/2 cup of Chobani Fat Free Vanilla Yogurt.  They are delicious and moist!

1-Minute Berry Ice Cream

Ingredients

Method

In advance: Put 4 small glasses in the freezer, or you can serve straight into ice cream cornets, if you prefer.

When you're all set up and ready to go, get the glasses (if using) and the frozen berries out of the freezer. Divide the fresh blueberries between the glasses or cornets. Put the honey and yoghurt and leaves from the sprigs of mint into the food processor and whiz, then add the frozen berries and whiz again until combined. Spoon the frozen yoghurt over the fresh berries and serve. Yum.

Lofthouse Style Frosted Sugar Cookies


Lofthouse Style Frosted Sugar Cookies

Cookies:

6 Cups unbleached flour
1 teaspoon baking soda
1 teaspoon baking powder
1/4 + 1/8 Cup Chobani Fat Free Yogurt,  plus 1/2 Cup mashed banana 
2 Cups. granulated sugar
3 eggs
2 teaspoon vanilla extract
1/4 teaspoon Salt
1 1/2 Cups FAT FREE Sour cream

Frosting:

1 Cups butter, room temperature
1 teaspoon vanilla extract
4 Cups powdered sugar
6 tablespoons heavy cream (or Fat Free Evaporated Milk)Several drops food coloring
Multi-colored Sprinkles

Directions:

In the bowl of a stand mixer with the flat beater attached, cream the
1/4 + 1/8 Cup Chobani Fat Free Yogurt,  plus 1/2 Cup mashed banana 
 and granulated sugar at medium speed until light and fluffy, about 3 minutes. Scrape down the sides of the bowl with a rubber spatula as needed. Add the eggs, one at a time beating until each is incorporated. Add the vanilla and sour cream and beat at low speed until combined.

Add the dry ingredients and beat at low speed until just combined, scraping down the bowl as needed. Dough will be a bit “sticky”. Divide dough into two sections. Flatten into rectangles about 1 1/2 inches thick, then wrap with plastic wrap. Chill in the refrigerator overnight or at least two hours until firm.

Preheat the oven to 425 degrees. Line 2 large baking sheets with parchment paper or spray them with nonstick cooking spray, set aside.

Use the plastic wrap that you chilled the dough in. Dust the top of the dough and then flip and flour the other side, keeping it on the plastic wrap. With a rolling pin, roll the dough out to 1/4-inch thickness. Using a 2 1/2-inch round cookie cutter, cut out circles and transfer to a baking sheet. Bake for 7 minutes, until pale golden. Immediately transfer cookies to a wire rack to cool. Best to work in small batches while keeping the remainder of the dough chilled.

To make the frosting, in the bowl of a stand mixer fitted with the paddle attachment, cream together the butter and vanilla. Slowly beat in the powdered sugar. Once smooth and creamy, add in heavy cream, 1 tablespoon at a time until the desired spreading consistency is achieved. If desired, add food coloring and beat until combined.

Once cookies have cooled completely, frost and add sprinkles. Allow frosting to set, then store in an air-tight container. Let cookies sit for several hours before serving to allow the flavors to develop.

Makes approximately: 5 to 6 dozen cookies (will vary on the thickness of the dough)

SPECIAL NOTES:  
  • These cookies are pretty darn close to the ones you buy in the store however, I am sure that original lofthouse recipe is under "lock and key" so we may never be able to completely duplicate it 100%. (Smile
  • I used the recipe that I found, and basically increased the amount of vanilla and working the dough in small batches, while keeping the rest chilled, works best. It is a VERY soft dough.
  • I thought they were quite tasty, but I know that they may not appeal to everyone, since they do taste a bit different than the ones in the store but are pretty close for a homemade version.

Orange Julius

Orange Julius!! 1 can orange juice concentrate, 1 cup milk, 1 cup sugar, 1/2 tsp vanilla, 2 cups ice.
1 can orange juice concentrate, 1 cup Fat Free milk, 1 cup sugar, 1/2 tsp vanilla, 2 cups ice.

1 1/2 cups diced fresh pineapple - 1 banana - 1/2 cup greek yogurt - 1/2 cup ice - 1/2 cup pineapple juice. This is like Orange Julius on steroids!
1 1/2 cups diced fresh pineapple - 1 banana - 1/2 cup greek yogurt (non-fat)  - 1/2 cup ice - 1/2 cup pineapple juice.

Honey And Cinnamon Powder

Blueberry Cream Pie




Gina's Weight Watcher Recipes
  • 9 inch ready made reduced fat graham cracker crust
  • 8 oz fat free Cool Whip
  • 2 cups fresh blueberries
  • 2 (5.3 oz) fat free blueberry yogurt
Combine Cool Whip, berries and yogurt in a bowl. Pour into pie crust and chill in the refrigerator at least one hour. Keep refrigerated until serving.
