Chocolate Chip Cookie Pie

Photo: Finally got around to making my Chocolate Chip Cookie Pie. I added chocolate chips to the top and more cookies than it called for. If it's good, I'll be making it for my friends! I think next time I want to try this with Oreo's or Nutter Butter cookies. Yummy!

1 (13 oz.) package LOW FAT chocolate chip cookies (original crunchy, not soft & chewy) ~ I use Chips Ahoy!
1 (9 oz.) prepared LOW FAT graham cracker pie crust
1 c. FAT FREE milk

1 (8 oz.) container FAT FREE Cool Whip
Directions
Set aside 2 chocolate chip cookies to crumble on top of the pie.
Place milk in a measuring cup. Dunk 8 cookies, one at a time, in the milk and place in a single layer in the bottom of the graham cracker crust. (Dunk each cookie quickly or it will absorb too much milk and crumble apart on you.) Spread 1/3 of the Cool Whip evenly over the cookies.
Dip 10 or 11 cookies, one at a time, in the milk and place in a single layer over the Cool Whip layer. Spread 1/3 of the Cool Whip evenly over the cookies. Repeat to create one more layer of cookies and one more layer of Cool Whip.
Crumble the reserved 2 cookies and sprinkle on top of the pie. Cover and chill for at least 8 hours before serving.

Oreo Cookie Pie with Oreo Crust and Crushed Oreo's on top.  Soak Oreo's in milk a few seconds longer than you did the Chips A Hoy cookies.

Cake Mix Peanut Butter Bars

IMG_3991

Ingredients:
Crust1 white cake mix
1 egg
3/4 cup Reduced Fat peanut butter
1/4 cup Fat Free Vanilla Chobani Yogurt

Filling:
1 (14 oz) can Fat Free sweetened condensed milk
1/2 cup peanut butter chips
3/4 cup Unsalted chopped peanuts
1 cup chopped Reese's (I used the Reese's Minis and cut them into thirds!)

Directions:Preheat oven to 350 degrees. Mix cake mix, the egg, yogurt, and peanut butter in large bowl. Mix with large spoon (or hands) until it makes a crumbly dough. Press 3/4 dough into the bottom of a greased 9x13 pan. Set the 1/4 dough mixture aside. Pour entire can of sweetened condensed milk over the pressed dough. Then sprinkle peanuts, peanut butter chips, and Reese's on top. The remaining dough should be a little crumbly, sprinkle what's left over the condensed milk and toppings. Most of the middle layer should be covered. Place in the oven and cook for 20-25 minutes, or until edges are golden brown. Cool for at least 45 minutes before serving, or dig in with a spoon right out of the oven for a gooey warm peanut butter treat!

Hi there, this page is to help Karen and her family. Karen was diagnosed with stage four colon cancer in the middle of February. At that point she was almost thirty weeks into her pregnancy. Karen soon after had to start Chemo. She is surrounded by a family and friends who love her very much. We just want to make it a little easier to get through this very tough time.
