Strawberry Fudge

Super Easy Strawberry Fudge - Super-easy and super-decadent treats for Valentine's Day or any day!
 
Ingredients
  • 1 (16 ounce) can of strawberry frosting
  • ½ teaspoon strawberry extract (I also used raspberry once when I was out of strawberry)
  • 1 (12 ounce) bag of white chocolate chips
  • ¼ cup red and white sprinkles (optional)
Instructions
  1. Spray an 8×8 dish with cooking spray.
  2. Mix the strawberry frosting and strawberry extract thoroughly. Set aside.
  3. Melt the white chocolate chips in the microwave, on 50% power, stirring often, until smooth.
  4. When the chips are completely melted, stir in the strawberry frosting and the sprinkles and mix well.
  5. Spread the fudge batter in the 8×8 dish. Top with additional sprinkles if desired.
  6. Place in the refrigerator to set.
  7. Makes approximately 12-16 fudge squares, depending on the size you cut.

Chicken Apple Salad

Clean Eating Recipes | Clean Eating Chicken Apple Salad Ingredients:  1 chicken breast, baked with whatever herbs you like best 2 cups lettuce (I prefer spring mix) 1 small apple 2 tablespoons vinaigrette (you’ll find the recipe here) Directions: Dice or shred your chicken breast. Dice your apple. Toss all ingredients in a large salad bowl.

37 CALORIES BROWNIES

 
3/4 cup nonfat Greek yogurt (I used vanilla)... 1/4 cup skim milk 1/2 cup Cocoa powder 1/2 cup Old fashioned rolled oats (like Quaker) 1/2 cup Truvia (or any natural/stevia based sweetener that pours like sugar) 1 egg 1/3 cup applesauce 1 teaspoon baking powder  Preheat the oven to 400°F. Spray with cooking spray a square baking dish (I used 8"x8"). Combine all ingredients into a food processor or a blender, and blend until smooth (about 1 minute). Pour into the prepared dish and bake for about 15 minutes. Allow to cool completely before cutting into 9 large squares.

Coconut - Cream Cheese Sheet Cake

Coconut - Cream Cheese Sheet Cake Recipe

Ingredients:

1 Cup Fat Free Vanilla Chobani Yogurt
6 oz Fat Free Cream Cheese, softened
6 Eggs
2 Cups Sugar
1 teaspoon Vanilla extract
2 1/4 Cups Unbleached flour
1/4 Cup Fat Free Milk
 
Frosting:
1/4 Cup Butter, softened
4 oz Fat Free Cream Cheese, Softened
1/2 teaspoon vanilla
1 1/2 Cups Confectioners' Sugar
1/2 Cup Coconut
 
Preheat oven to 350 degree F.

Prepare a 9 x 13 pan with non stick cooking spray.            
Cream together yogurt, cream cheese and sugar.            
 
Beat in eggs one at a time, vanilla and then mix in flour.
Spread batter into prepared pan.

Bake 35 to 40 minutes or until wooden pick comes out clean.

Cool on cooling rack            
 
Frosting:

Beat together butter, cheese, vanilla and add sugar.

Mix until well blended.
You can now toast coconut. I toast mine in a lighty sprayed skillet and keep tossing until golden. You can also place coconut on a baking sheet and toast in oven, turning frequently so not to burn.            
Cut cooled cake into 24 squares and top with frosting and coconut.

Note: Best kept refrigerated.

1 ounce Good Seasons Italian salad dressing mix (1 package)

Day 22

Never allow children to make decisions that affect others.

Never allow children to make a decision unless you are willing o allow them to live with the consequences of that decision.

Love and Logic Day #21

Day 21
 
No parent should put up with bad behavior. Allowing kids to misbehave is very damaging to them. They think they are incapable of controlling themselves.

Children whose parents provide no limits or controls become very insecure. 

Just because a child cries or has a fit doesn’t mean that parents are wrong or needs to give in.

No rewards come to parents who are not willing to pay the price.  Stand firm in the consequences of your child’s actions that you have given.

It is never too late to change a behavior pattern.

Make your words Gold not Garbage.

Never tell a child to do something unless you intend to follow through.

When child refuses to obey, take them by the hand to another location, lower your voice and tell them that that is enough, and what you expect them to do.  Then say, do you think it would be wise for you to continue acting that way?  Get back in there and show me that you can behave.  Thank you!

When you can’t think of a consequence for their behavior right away, tell them you’ll let them know later what you are going to do about it.

Always follow through with the consequences you set forth.
