Homemade Chewy yet Crunchy Chocolate Chip Granola Bars Low Fat/Low Sodium Version: 2 cups quick cooking oats 1 cup crisp rice cereal 1/4 cup unsweetened shredded coconut 1/2 cup mini chocolate chips 1/4 cup brown sugar, 1/8 cup unsweetened applesauce or Fat Free Vanilla Chobani Yogurt, 1/4 cup honey 1 tsp. vanilla Method: Mix all ingredients together until well combined. Press into a cooking sprayed 9 x 13 pan and bake at 350 for 20 minutes. Cool completely and cut into bars.
Try subbing nuts, cranberries, raisins, dried apples, white chocolate chips, etc.
I followed the directions verbatim but these granola bars are crispier rather than chewy. The flavor and ingredient proportions were spot on though. May try cooking the sugars in a sauce pan then adding to dry ingredients rather than baking.
