Fried Potatoes

Oven bake a potato.  When the potato is cool (cool potatoes are easier to cut up, and they hold together better) dice the potato into bite size pieces.  Place in a non-stick fry pan.  Add whatever spices & seasonings you desire, and cook till golden brown.  Be sure to turn potatoes occasionally.  No cooking spray needed if pan is in excellent shape.  If it is not in great shape, then a light spray would be a good idea.  Delicious, and good for you!
