Waffles

1 3/4 Cups Unbleached Flour
1 Tablespoon Baking Powder
2 Egg Yolks
1 3/4 Cups FAT FREE Milk
1/2 Cup Unsweetened Applesauce
2 Egg Whites
1/2 Teaspoon Salt

In a large mixing bowl stir together flour, baking powder, and salt.  In a small mixing bowl beat egg yolks with a fork.  Beat in milk and applesauce.  Add to flour mixture all at once.  Stir mixture till blended but still slightly lumpy.

In a small mixer bowl beat egg whites till stiff peaks form.  Gently fold beaten egg whites into flour-milk  mixture, leaving a few fluffs of egg white.  Do not overmix.

Pour batter into grids of preheated, cooking oil sprayed waffle iron.  Close lid quickly; do not open during baking.  Use a fork to help lift the baked waffle off the grid.
